How to Make the Best Elderberry Gummies

Homemade Elderberry Gummies, Immune Boosting and Naturally Sweetened

These homemade elderberry gummies are a simple, nourishing treat made with just a handful of wholesome ingredients. The main ingredients are elderberry syrup, which can be store bought or home made, gelatin, and honey! Elderberry syrup is traditionally used to support immune health, while grass-fed gelatin provides beneficial amino acids that support gut, skin, and joint health. Naturally sweetened with honey, these gummies are free from artificial colors, flavors, and preservatives, making them perfect for both kids and adults. I originally made them for my kids as a healthy treat, but soon after my husband started to eat by the handful and now I make double batches, especially in the the middle of winter when it seems like someone on my house is fitting off a cold!

Best of all, they take only minutes to prepare and set beautifully in the refrigerator. I’ve made these elderberry gummies using both homemade elderberry syrup and store-bought varieties, and they turn out great either way. Homemade syrup allows you to control the ingredients and sweetness, but is definitely more labor intensive. That said, a high-quality purchased elderberry syrup works just as well and makes this recipe even more convenient. As long as the syrup is well mixed and not overly thick, the gummies will set and deliver the same delicious flavor and benefits.

Making these elderberry gummies is a quick and enjoyable process, to be honest the hardest part is piping them into the molds, I def need to by a bigger gummy bear mold to make this part easier! The key is allowing the gelatin to properly “bloom” before adding heat, which ensures a smooth texture and perfectly set gummy. Because the mixture comes together in just minutes, it’s easy to prepare while cooking dinner or during a quiet moment in the kitchen. Pouring the liquid into molds can even be a fun activity for kids as well, and we often use a dropper to make it easier. Follow this recipe and you’ll have a healthy homemade treat ready to enjoy in just a couple of hours!

INGREDIENTS

  • 1 cup elderberry syrup

  • ⅔ cup warm water

  • 4 tablespoons grass-fed gelatin

  • 2 tablespoons local honey

PROCEDURE

    1. Heat ⅔ cup of water in a saucepan over low heat. The water should be hot but not boiling.

    2. Meanwhile, In a medium bowl, mix the elderberry syrup and gelatin until evenly combined. Let the mixture sit for about 1–2 minutes, allowing the gelatin to bloom and thicken.

    3. Pour the hot water over the gelatin mixture. Whisk thoroughly until the gelatin is fully dissolved and the mixture is smooth.

    4. Add the honey and whisk again until completely incorporated.

    5. Remove from heat, and carefully pour the mixture into silicone molds or a glass baking dish.

    6. Refrigerate for 1–2 hours, or until fully set. Once firm, remove from molds if needed and transfer to an airtight container.

    7. Store elderberry gummies in a sealed container in the refrigerator. They will keep well for up to 1–2 weeks when properly chilled.

Tips & Variations

  • Silicone molds make removal easy and create fun shapes for kids. Get the bigger ones, youll thank me :)

  • For firmer gummies, add an extra tablespoon of gelatin.

  • If your elderberry syrup is already sweet, you can slightly reduce the honey to taste.


This recipe cards calls for 4 Tbsp, honey, but I found even 2 Tbsp. works for this recipe, depending on how sweet you like them!
