Ingredients
For the Crispy Rice
3 cups cooked jasmine rice (day-old works best)
2 tablespoons coconut aminos or liquid aminos
1 tablespoon toasted sesame oil
1 teaspoon garlic powder
1/2 teaspoon sea salt
Fresh cracked black pepper
For the Salad
4 Persian cucumbers, thinly sliced
2 large carrots, julienned
1 ripe avocado, diced
3 green onions, thinly sliced
1/2 cup chopped cilantro
1 tablespoon toasted sesame seeds
1 cup shelled edamame
2 cups shredded cooked chicken (optional)
For the Ginger Lime Dressing
3 tablespoons coconut aminos or liquid aminos
2 tablespoons rice vinegar
1 tablespoon toasted sesame oil
Juice of 1 large lime
2 teaspoons freshly microplaned ginger
1 teaspoon honey (optional)
Pinch sea salt
Procedure
Make the crispy rice by preheating the oven to 400°F (200°C).In a large bowl, combine the cooked rice with coconut aminos, sesame oil, garlic powder, salt and pepper. Spread into an even layer without overcrowding. Bake for 15-20 minutes, stirring halfway through, until the rice becomes deep golden and crispy around the edges. Put aside and allow to cool for 10 minutes. It will continue to crisp as it cools.
To make the dressing whisk together the coconut aminos, rice vinegar, sesame oil, lime juice, grated ginger and honey if using. Taste and adjust acidity or sweetness as desired.
Assemble the Salad- In a large serving bowl combine thinly sliced cucumbers, carrots, avocado. cilantro, green onions, sesame seeds, edamame, and chicken if using.
Add the crispy rice just before serving.
Pour over the dressing and gently toss.
Finish with an extra squeeze of lime and more sesame seeds.
Serve immediately while the rice is still crunchy.
